I knew in order to meet both of those needs I would need some protein and crunch, so I went to my fridge, pulled out an apple,a small container of plain greek yogurt, and some PB2. At first, I was eating everything separately, bite of the sliced apple, spoonful of yogurt mixed with PB2. Then, I thought about using the PB2 yogurt as a dip, similar to this...but that just wasn't cutting it because now I had a hankering for almonds, there's just something about greek yogurt and almonds, they go together like rama lama lama ka dinga da dinga dong (excuse my Grease reference, I just heard that song the other day and I couldn't help but try and be punny here and I'm sure you sang along to that part while reading!) ANYWAY, greek yogurt and almonds are a favorite of mine, plus they complete the amino acid chain when eaten in combination so you get the most bang for your buck nutritent wise when indulging in the two of them together! So I grabbed a handful of almonds and sat back down at my countertop and decided to get a little creative with my presentation, behold, Turtles on Rocks. At first, I had no name for it, but then I thought about how it resembled the childhood favorite, 'Ants on a Log' so with a play on words and a lot more protein, I came up with this!
For all my followers who have children or work with children, this is a GREAT snack idea to serve, kids love bite size things that are created to be fun!
Turtles on Rocks (Serves 1, want a whole bunch of turtles, use more apples!)
1 Apple - cored, then cut into small pieces
