Trees transform.
Golden yellow, ripened orange and rouge red leaves now adorn their branches. The weather is not yet cold, but the heat and sweat of summer has dissipated, leaving the air fresh and brisk.
And then there's the my absolute favorite part, PUMPKIN. I love pumpkin picking, pumpkin decorations, pumpkin carving, and most of all, I LOVE EDIBLE PUMPKIN <3
I have got some delicious snacks to share with you this month in the spirit of Fall, but I thought I would start with "Pumpkin Pie" Overnight Oats, dessert for breakfast!
NOW, REMEMBER, everyone's taste buds are different, I have a sweet tooth so I may use more sugar, cinnamon, or spice than you would, base it on what YOU like/prefer, I usually don't even measure, just eyeball it!
"Pumpkin Pie" Overnight Oats
1/4 cup Pumpkin Puree (I usually don't measure, I just add one or two heaping spoonfuls)
1 tsp. Pumpkin Pie Spice
1 tsp. Cinnamon + 1 extra shake
1/2 to 1 Tbsp. Brown Sugar OR Splash of Vanilla Extract if you don't want to add any sugar
1/3 cup Old Fashioned Oats (Bob Mill's GF)
1/4 cup Chobani Vanilla Greek Yogurt (can use plain)
1/3 cup lactaid (or soy, almond, coconut milk)
2 tsp. chia seeds
Pumped Up "Pumpkin Pie" Overnight Oats
1 scoop Vanilla Isopure Protein Powder (or your brand of vanilla, this eliminates needs for sugar!)
1/4 cup Pumpkin Puree (I usually don't measure, I just add one or two heaping spoonfuls)
1 tsp. Pumpkin Pie Spice
1 tsp. Cinnamon + 1 extra shake
1/3 cup Old Fashioned Oats (Bob Mill's GF)
1/4 cup Chobani Vanilla Greek Yogurt (can use plain)
1/3 cup lactaid (or soy, almond, coconut milk)
2 tsp. chia seeds
1. Add all ingredients together into a jar/container
2. Close the lid tightly and SHAKE SHAKE SHAKE
3. Put into the fridge, try not to drool in your sleep thinking of your morning dessert!
Tips/Notes
- With the Pumped Up "Pumpkin Pie" Overnight Oats, other protein powder flavors that might taste good would be Trutein Cinnamon Bun or Pumpkin Pie flavor!
- For an even more tantalizing treat for your taste buds, add a scoop of peanut butter or PB2 to your pumpkin pie oats, IT IS HEAVENLY
- Don't like cold "pie", heat your oats up in the microwave at 30 second intervals till it's "just right"
- I add my fruit the morning of BUT you can add your fruit into the jar the night beforehand
