The flavor alone of this dish is sure to make it a favorite but the fact that it took less than ten minutes of prep and is made in a crockpot which means less work for you, should bump this recipe up to the top of your list to try out!
I tweaked Stephanie's recipe a bit, since I hate anything with spice, so if you are interested in packing some heat with your portion, she added 1/4 teaspoon of red pepper flakes!
4 chicken breasts (already defrosted)
1 1/2 cups of Applesauce (I used Wegman's natural, no sugar added, naturally gluten free and dairy free!)
1 onion chopped
1 Tablespoon apple cider vinegar
1/4 teaspoon cinnamon + a few extra sprinkles, I like things sweeter!
1/2 Tablespoon black pepper
1 teaspoon minced garlic - very convenient comes in a squeeze bottle! (which is the same thing as two cloves minced)
1. Spray or grease the bottom of your crockpot, add chicken breasts
2. Top with chopped onion
3. Mix applesauce, apple cider vinegar, garlic, cinnamon, and pepper together. I am a big supporter of 'tasting' the marinade or sauce prior to adding it to the crockpot to see if it needs tweaking, if so, add whatever it needs after a sample!
4. Pour mixture on top of chicken breasts
5. Cover and cook on low for four hours, depending on your crockpot this time may be longer or shorter.
I made this recipe but halved it because I made it with only two breasts, and it was done in a little under three hours.
Pair this dish with quinoa, my favorite grain! Or even rice if you prefer and add whatever vegetables that suit you, for me, it was a medley of green beans and mushrooms, my absolute favorite!
